Ingredients:
- Boneless, skinless chicken breasts
- Fresh spinach (chopped and cooked)
- Feta cheese (crumbled)
- Garlic (minced)
- Olive oil
- Salt and pepper
- Italian seasoning (optional)
- Toothpicks or kitchen twine
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a pan, sauté minced garlic in olive oil until fragrant. Add chopped spinach and cook until wilted. Allow it to cool.
3. In a bowl, mix the cooked spinach, crumbled feta cheese, salt, pepper, and Italian seasoning if desired.
4. Cut a pocket into each chicken breast by slicing horizontally along the side, making sure not to cut through completely.
5. Stuff each chicken breast pocket with the spinach and feta mixture.
6. Secure the openings with toothpicks or tie with kitchen twine.
7. Season the outside of the chicken breasts with salt, pepper, and additional Italian seasoning if desired.
8. Heat olive oil in an oven-safe skillet. Brown the stuffed chicken breasts on each side for a few minutes.
9. Transfer the skillet to the preheated oven and bake for about 20-25 minutes or until the chicken is cooked through.
10. Remove the toothpicks or twine before serving.
